Ingredients

  • 1 medium sized sweet potato (peeled and diced)
  • 3 Tablespoons olive oil (divided)
  • 1 ¼ Teaspoons salt (divided)
  • ¾ teaspoons pepper (divided)
  • 1 ¼ pounds Boneless skinless chicken breasts (cooked, cut into pieces)
  • 2 cups Broccoli florets
  • 1 Bell pepper (cored and cut into ½ inch pieces)
  • 1 Zucchini (halved lengthwise, then cut into 1/2-inch-thick half moons)
  • 1 Yellow squash (halved lengthwise, then cut into 1/2-inch-thick half moons)
  • Zest and juice from 1 lemon
  • 2 ½ teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup Grated parmesan cheese
  • Fresh herbs of choice

Instructions

Wash and cut vegetables, cook and cut up chicken if not using leftovers

Place the sweet potato cubes in a large bowl and drizzle with 1 tablespoon olive oil and sprinkle with ¼ teaspoon kosher salt and ¼ teaspoon black pepper.

Toss to coat, then spread the cubes out in a single layer on the baking sheet. Bake for 10 minutes.

Place the chicken and other vegetables into the bowl and drizzle with the remaining oil, lemon juice and zest, and the seasonings and toss to coat.

Add the chicken/vegetable mixture onto the pan and spread into an even layer.

Bake for 15 to 20 minutes, stirring about 10 minutes into cooktime

Sprinkle with Parmesan cheese and fresh herbs before serving if desired
