A gorgeous seasonal salad with a variety of vivid vegetables and a fantastic fruit and honey vinaigrette!

Ingredients

For the Vinaigrette:
- 20 Muscadine grapes
- 1 teaspoon honey
- ¼ teaspoon sea salt
- 1 tablespoon white wine vinegar
- ½ cup oil For the Salad:
- 3 small peppers (thinly sliced)
- 5 pods of okra (thinly sliced)
- 1 yellow squash (thinly sliced)
- 10 cherry tomatoes Or 1 or 2 larger tomatoes cut into wedges and sliced)
- Lettuce or other greens
- Crumbled or sliced goat cheese for topping
Instructions
Wash and slice the peppers, okra, squash, and tomatoes
Cut the grapes in half, remove the seeds, and squeeze out the grape innards. Put the grape skins and half of the grape innards into a food processor. Set the other half aside.
Add the honey, salt, and vinegar to the food processor and puree until smooth. Slowly add the oil while the machine is running to let the mixture emulsify
Pour most of the vinaigrette over the reserved grape halves and stir until they are well mixed.
Toss the sliced vegetables, greens, and coated grapes together until well combined, then top with goat cheese and the remaining vinaigrette.

If cherry tomatoes aren’t available, larger tomatoes can be cut up instead!
