This cold weather makes me want breakfast for dinner! How about scrambled eggs, sausage, and pancakes? Items underlined are available at Market2Go!
Sausage links or patties, scrambled eggs
Pancake recipe:
3 cups self rising flour
3 TBSP sugar
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup melted butter
Mix all ingredients well and cook on greased or non-stick griddle.
Enjoy your pancakes with Sugar Cane Syrup or Honey.

It’s the season for fresh, delicious lettuce, and our farmers have planted a great variety. Be sure to enjoy lettuce while it’s in season…my personal favorite is the red leaf! It’s also a great time for fresh carrots, sweet potatoes, kale, turnips, arugula, beets, and so many more winter veggies! Some of you have asked how we have tomatoes in the middle of winter, and our farmers are growing them for your enjoyment in their greenhouses and hoop houses!

The Market is Open at Statesboro Market2Go!


Twice-Baked Sweet Potatoes
2 medium sweet potatoes
1 TBSP sour cream
1/8 c. butter
1/2 cup brown sugar
1/2 tsp orange extract
1/4 cup chopped pecans
Lightly grease potatoes and pierce with fork. Place in microwave and cook until just tender. Cut potatoes in half, and scoop out pulp, being careful to leave a thin shell. Mash potato pulp until smooth, mix in sour cream, butter, brown sugar, and orange extract. Season to taste with salt and pepper. Spoon potato mixture into potato shells. Sprinkle with pecans. Place in a baking pan and bake in preheated 400 degree oven until browned, about 20-25 min.

SPICY SALMON WITH BOK CHOY AND RICE
Cook 1 cup long grain white rice. Combine 2 tbsp. honey, 1 tbsp. soy sauce, and 1/4 tsp. crushed red pepper. On a foil lined rimmed baking sheet, broil salmon filet until opaque, about 8-10 min. basting with the honey mixture during the last 3 min. Steam 1 lb. bok choy cut into pieces, until tender, 8-10 min. Serve bok choy with salmon and rice.
