Pav Bhaji (Spicy Vegetable Curry)

Ingredients
2 tablespoons Butter      View Available Products
1 large Onion (finely diced)      View Available Products
2 or 3 Spicy green chili peppers      View Available Products
1 Bell pepper (preferably red, finely diced)      View Available Products
1 tablespoon Ginger-garlic paste
2 large Tomatoes (finely diced)      View Available Products
2 teaspoons Kashmiri chili powder
2 teaspoons Garam Masala
1 teaspoon Turmeric
1 teaspoon Coriander
1 teaspoon Ground cumin
Salt to taste
15 ounces Chickpeas
2 large potatoes (peeled and diced) (or use multiple small potatoes)      View Available Products
1 cup Cauliflower (chopped)      View Available Products
1 large Carrot (finely diced)      View Available Products
1/2 cup Peas      View Available Products
2 cups Water

Step by Step Instructions
  1. Heat the butter in a pot or pan and cook the peppers and onion for 5 to 6 minutes. Add the ginger-garlic paste and cook for 30 seconds (stirring), then add the tomatoes and cook stirring for 6 to 7 minutes.
  2. Add the spices, chickpeas, potatoes, cauliflower, carrots, and peas, and stir well. Pour in the water, bring the mixture to a boil, cover, reduce to a simmer and let cook for 30 minutes
  3. Mash up the mixture in the pan with a fork or a potato masher (or pour the mixture into a food processor)
  4. Serve with toasted buttered bread with cilantro, onions, pats of butter, and lemon wedges.
