Breakfast Stuffed Peppers

Vegetarian!
Ingredients
1/4 of a
Green onion (diced)
OR scallion
1/2 teaspoon
Salt
1 tablespoon
Pesto
Additional vegetables such as:
Spinach
Chives
Parsley for garnish
Step by Step Instructions
- Cut the bell pepper in half and remove the innards and seeds. Sprinkle the cheese into the empty areas.
- Finely dice the tomato and the green onion/scallion, then add both to the pepper halves. You may also add other vegetables if you desire.
- Whisk the eggs, salt, and pesto together in a bowl, then fill each pepper half with the mixture.
- Gently transfer the pepper halves to an air fryer and fry for 18 to 20 minutes at 370. Garnish with parsley, then serve.
