Breakfast Stuffed Peppers

Vegetarian!

Ingredients
1 Bell pepper (halved and seeds removed)      View Available Products
1 tablespoon Cheese of your choice      View Available Products
2 tablespoons Diced tomato      View Available Products
1/4 of a Green onion (diced)
OR scallion
1/2 teaspoon Salt
4 medium-sized Eggs      View Available Products
1 tablespoon Pesto
Additional vegetables such as:
Mushrooms      View Available Products
Spinach
Onion      View Available Products
Chives
Zucchini      View Available Products
and/or Jalapenos      View Available Products
Parsley for garnish

Step by Step Instructions
  1. Cut the bell pepper in half and remove the innards and seeds. Sprinkle the cheese into the empty areas.
  2. Finely dice the tomato and the green onion/scallion, then add both to the pepper halves. You may also add other vegetables if you desire.
  3. Whisk the eggs, salt, and pesto together in a bowl, then fill each pepper half with the mixture.
  4. Gently transfer the pepper halves to an air fryer and fry for 18 to 20 minutes at 370. Garnish with parsley, then serve.
