This week we’re highlighting some gorgeous purple vegetables that are also rich in vitamins & antioxidants! That’s right, we’re talking about EGGPLANTS!
These vibrant vegetables can be used in a variety of ways, so here are some suggestions:
- Serve them up in Ajvar, a spicy sauce with cayenne & bell peppers bringing the heat,
- Roast them and serve them with caramelized onions, and some potatoes, fresh basil, and cherry tomatoes,
- Stewed up in a veggie-rich Curry with carrots, tomatoes, kale, and garlic,
- Or Baked until crispy and served covered with melted cheese & minced fresh herbs!
- Alternatively, if you want to be able to enjoy them after they’ve gone out of season, try freezing them now for later use!
