We are harvesting some crazy jumbo sweet potatoes! They may have cracks or wonky shapes, but they’re loaded with delicious sweet potatoes flesh with less skin to deal with. This listing is for one sweet potato that weighs at least 1.5lbs, if not more! The potato will be either Vardaman or Hernandez variety. Their size does not affect their flavor. While they take longer to roast than “normal sized” sweet potatoes, that is my favorite way to cook them. I just cut them in half (or thirds) and there’s far less skin to deal with.
